Earl Eidson learned to cook from his mom and dad, while growing up in Mathiston, MS. During his tenure as a police officer in Starkville MS in the 1980s and 90s, he often cooked for his fellow cops, who frequently told "Officer Earl" he should open his own restaurant. He began to run a small catering business from his home, with his most frequently requested item being his smoked Boston Butt. A job offer in Tunica brought Earl and his wife Alison and daughter Claudia to the Desoto County area in 2004; he later left that job to work full time for the outdoor sporting goods company Sportsman's Warehouse. After moving up the ranks within the two local stores, the company closed 23 of its stores in early 2009 including the ones in Southaven and Memphis.
Having already predicted something was changing with the company, Eidson decided to find his own way in a struggling economy. In March 2009, he decided to put a plan into action that had been in his head for nearly 20 years...open a small BBQ hut with take-out and catering services. By mid May, he opened the door on his future to a welcome crowd of locals and added picnic tables for outdoor dining to those who want to slow down for a minute and enjoy their delicious food from Willie Earl's Pig Out Barbeque and Smokehouse.
Besides the warm and friendly atmosphere, you'll find some of the best BBQ pork and ribs at Pig Out and many unique items too, such as baked potato salad, corn salad, turnip greens to rival grandma's home cookin', fried apple pies and a weekly $5 Special every Thursday. Pig out on the Feed Trough with pulled pork and baked beans in one bowl topped with cole slaw. You can also purchase the Rub Me Tender dry rub, Smooth Talkin' Sweet Sauce and Mama Said "No!" hot sauce at the restaurant, as well as t-shirts and hats (coming soon) featuring the "Nobody Rubs Like Us!" slogan.
